Papaya Lime Sorbet

May 20, 2015 Jessica Tom

Papaya and lime. They're more than nice pairings... they complete each other.

Papaya is a subtle, low-acid fruit. It's floral, but not as insistent as lychee. It's tropical, but not as overt as mango. And so lime strengthens its lines, like a few swipes of makeup that enhances the beauty that's already there.

RECIPE:

Freeze 1 1/2 cups of papaya and half a banana (or, if you're like me, just keep a bunch of frozen fruit in the freezer for sorbet and smoothies). Blend in a Vitamix with one glug of almond milk, 1 teaspoon of honey and the juice of 1 lime. If the mixture isn't blending, add more almond milk.

Love is ABC Ice

July 18, 2012 Jessica Tom

Last year, my coworkers at 3rd Ward asked Julian what desserts I liked so they could surprise me for my birthday. I only found out after the party that he wrote this: Dessert-wise, Jess likes a lot of stuff--generally the more inventive/outlandish...

Superfood Sundae

April 21, 2012 Jessica Tom

This is basically an article out of SHAPE magazine, made into "sundae" form. It has matcha, goji berries, cacao nibs, and mulberries (no kale, walnuts, kefir, or acai though). I let the astringency of the matcha take over the banana and pineapple ...

Banana Beet Ice Cream

September 9, 2011 Jessica Tom

On the good ol' Serious Eats, I asked a question: What are the foods you've taught yourself to like? And to my surprise, many people replied beets. Beets! The candy of the Earth, the ruby of root vegetables. The world is full of surprises. Beets m...

Superfood Frozen Yogurt

September 1, 2011 Jessica Tom

Julian is working on clerkship applications. No need to be jealous! It is actually not that fun. So I made him this dessert, because I want to help the guy out, but am of zero use in editing legal stuff. It's a dessert that has it both ways. It's ...

Pineapple Vinho Verde Sorbet with Prickly Pear

July 22, 2011 Jessica Tom

The prickly pear is a challenging, rather enigmatic fruit, more seed than flesh. Imagine a pomegranate with the membranes dissolved, or a grenade loaded with juicy pellets. Like papaya, it tastes great with a squeeze of lime to zip its flavors. It...

Strawberry Lemon Thyme Sorbet with Balsamic Maceration

July 4, 2011 Jessica Tom

So I've just handed in the last revision of my novel, and I'm spent! Seven pages of notes, all internalized, analyzed, and folded gently into my 320-page manuscript. Now where is my drink? Writing a novel is very different than a blog. A novel is ...

Pineapple Lemon Balm Sorbet with Pistachio Shortbread

June 13, 2011 Jessica Tom

Growing up, I thought lemon balm was really called Lemon Bomb. It overtook our vegetable beds and was more obnoxious weed than treasured herb. This sorbet makes an obnoxious herb into a well-mannered member of society. The pineapple works double d...

Raspberry Rose Sorbet with Litchi Yogurt Cream // A Cold Ispahan

June 7, 2011 Jessica Tom

Ice cream is typically not a place for subtlety. Cold dulls taste. That's why ice cream is perfect, and melted ice cream cloying. Ice creams are also seemingly designed for bold flavors -- chocolate chip cookie dough, butter pecan, rum raisin. Or ...

Fig & Port Black Bean Ice Cream

May 23, 2011 Jessica Tom

This ice cream won't make you lose your head, but you might come away dizzy. The trick is to mix this just enough, but not too much. Just enough for the black beans to release their heft, for the bananas to lend their velour, for the figs to pop ....

Rosemary, Pear & Orange Blossom Sorbet

May 17, 2011 Jessica Tom

Somewhere in the ether, someone came up with the combination of pear and rosemary. Let us investigate. Pear = granulated, sweet, buttery. Rosemary = piney, eucalyptusy, savory. I can't quite put my finger on why these two flavors go together so we...

Red Delicious & Peanut Butter Ice Cream // Kindergarten Throwback

May 11, 2011 Jessica Tom

Honeyed Avocado Popcorn Ice Cream

May 4, 2011 Jessica Tom

Warning sign #1 your dessert is very rich: The lightest part is the Corn Cookie from Momofuku Milk Bar. This started with a frozen avocado. I thought it'd be too heavy as a straight ice cream, but yogurt was too sour. Bananas too assertive. So I t...

Raw Cauliflower Manchurian & Zinfandel Blueberry Sorbet

April 24, 2011 Jessica Tom

Neo-Neopolitan Strawberry-Vanilla Frozen Yogurt with Cacao Nibs

April 14, 2011 Jessica Tom

Carrot Marmalade Sorbet with Roasted Hazelnuts

April 5, 2011 Jessica Tom
